Biggar changes from season to season. Early season cheese has along, lingering sweet flavour with a sharp undertone; late season cheese is punchier and more savoury. Biggar Blue and its creator – Selina Cairns are seen as pioneers of Scottish Artisan cheese. Biggar Blue is Scoland’s only goat milk blue. Made for the first time for us in December 2019. It’s new to the scene but utterly delicious.
