MANCHEGO – Spain’s most famous cheese – mentioned in Don Quixote, our Manchego is dry and waxy in texture and has a mild, fruity taste with hints of flowers and pineapple. It is traditionally served with sweet quince paste and the combination of the two is sublime. Manchego is made from the milk of Manchega sheep – residents of La Mancha region in Spain which is 600 meters above sea level. Our Manchego is aged for 12 months – giving it a butterscotch coloured flesh and sweet lingering flavour.
MEMBRILLO – We believe that you can’t have a better cheeseboard accompaniment than Spanish membrillo or quince paste as its more commonly known.
Traditionally it pairs great with sharper/saltier cheeses or dishes but it’s just as good with a creamy more delicate cheese too.
