Finn is a rich triple-cream bloomy rind cheese. With a texture somewhat akin to a goats cheese or an under ripe brie in the centre which softens towards the rind which is a fluffy white, its mushroom-y flavours and sweet milky undertones are complex and indulgent. Made by Neals Yard Creamery – an offshoot of the famous London cheese shop– Finn is a classic British cheese.
The milk for the cheese is collected each morning by the dairy’s own small tanker from a nearby farm. Double cream is added to whole milk which is then left to sour gently before rennet is added in the afternoon, the following morning they are hand ladled into moulds and then ripened for 2-3 weeks.
