- ISLE OF MULL CHEDDAR
A Scottish version of Somerset-style cheddar with a fruity, sharp and very tangy flavour. Made by the Reids, who moved from Somerset to Mull in the late 70’s, Isle of Mull Cheddar is known for its pale colour and sharp tang. The pale colour is the result of the climate – due to a short growing season the cows are kept indoors for much of the year. This means that they are fed of a mixture of silage and draff (grain husks from the local distillery), which is lower in carotene than grass. There is a clear difference between the cheese made during the short summer months – which is moister, nuttier and more butter coloured – and the cheese made during the rest of the year.
The huge variety of flora which grows in the meadows where the Durrus cows graze transfers into the flavour which is rich, powerful, full bodied and is often compared to a bold red wine. Made in Coomkeen, Co. Cork. This washed rind Irish cheese packs a powerful kick with a creamy texture. A lovely farmhouse finish to it.
- LANARK BLUE
Lanark changes from season to season. Early season cheese has along, lingering sweet flavour with a sharp undertone; late season cheese is punchier and more savoury.
- PRIMA DONNA MATURO
A combination of hard, salty Parmesan and sweet, soft Gouda, Prima Donna provided a balanced flavour profile. As it ages it develops lactic crystals – which appear as small white dots throughout the cheese. These provide a subtle crunch and saline hit.
- OSSUAU IRATY
A delicious ewe’s milk cheese, semi soft, from the Basque region of the French Pyrenees it is delicate, fruity with a sweet edge. The milk comes from three different local species of sheep kept by 150 different milk producers throughout the valley.
